Low Carb Taco Casserole is a hearty and flavorful dish that brings all the classic taco flavors into a low-carb, keto-friendly casserole. Ingredients

  • 1 lb ground beef (or ground turkey)

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 1 bell pepper, diced

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or homemade seasoning)

  • 1/2 cup tomato sauce (no sugar added)

  • 1/2 cup sour cream

  • 1 cup shredded cheddar cheese (or Mexican blend)

  • 1 cup shredded mozzarella cheese

  • 1/2 cup sliced black olives (optional)

  • 1/4 cup chopped green onions (for garnish)

  • 1/4 cup fresh cilantro, chopped (optional for garnish)

  • Salt and pepper, to taste

Instructions

  • Preheat the oven: Preheat to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil or cooking spray.

  • Cook the ground beef: Heat olive oil over medium heat in a large skillet. Add the diced onion and bell pepper, cooking for 3-4 minutes. Add garlic and cook for another 30 seconds. Add ground beef, breaking it apart, and cook until browned. Drain excess fat.

  • Season the meat: Add taco seasoning and stir. Pour in tomato sauce and mix well. Simmer for 2-3 minutes to blend flavors. Season with salt and pepper to taste.

  • Assemble the casserole: Spread the seasoned beef mixture evenly in the prepared baking dish. Layer sour cream over the beef, spreading it evenly. Top with shredded cheddar and mozzarella cheeses.

  • Bake the casserole: Place in the oven and bake for 15-20 minutes, or until cheese is melted and bubbly. For a golden top, broil for 2-3 minutes.

  • Garnish and serve: Remove from oven and let rest for a few minutes. Garnish with sliced black olives, green onions, and cilantro before serving.
