Ingredients

  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 1/2 cups granulated sugar (divided)
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 2 cups hot water

Instructions

  • Preheat Oven & Melt Butter:

    • Preheat oven to 350°F (175°C). Place butter in a 9×13-inch baking dish and let it melt while the oven preheats.
  • Prepare Batter:

    • In a bowl, mix flour, 1 cup sugar, baking powder, and salt. Stir in milk until just combined.
  • Assemble the Cobbler:

    • Pour the batter over the melted butter. Do not stir.
  • Make Lemon Topping:

    • In another bowl, mix the remaining 1/2 cup sugar, lemon juice, and lemon zest. Sprinkle over the batter.
  • Add Hot Water:

    • Carefully pour hot water over the top without stirring—this creates the cobbler’s signature texture.
  • Bake:
