Ingredients

  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon extract
  • 1 can (21 oz) lemon pie filling

Instructions

Preheat & Prepare Butter:

  • Preheat oven to 350°F (175°C).
  • Place butter in a 9×9-inch baking dish and melt it in the oven for 3–4 minutes. Remove once melted.

2. Make the Batter:

  • In a bowl, whisk flour, baking powder, salt, and sugar until combined.
  • Stir in buttermilk, vanilla extract, and lemon extract until smooth.

3. Assemble the Cobbler:

  • Pour the batter evenly over the melted butter. Do not stir.
  • Spoon the lemon pie filling over the batter, ensuring even distribution. Do not mix.

4. Bake:

  • Bake for 45–55 minutes until the top is golden brown and set.

5. Serve & Enjoy:

  • Let cool slightly before serving. Delicious warm with ice cream, whipped cream, or powdered sugar.
