This refreshing Mango Salad combines sweet mangoes, crisp cucumbers, and a zesty lime dressing for a light and flavorful dish. Perfect as a side or a standalone meal, this salad offers a balance of sweet, tangy, and mildly spicy flavors, making it a summer favorite.

 

Ingredients

  • 2 ripe mangoes, peeled and cubed
  • 1 cucumber, diced
  • ¼ red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey (or maple syrup for a vegan option)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ jalapeño, finely chopped (optional)

Instructions

  1. Combine Ingredients:
    • In a large bowl, mix the cubed mango, diced cucumber, red onion, and cilantro.
  2. Prepare Dressing:
    • In a small bowl, whisk together lime juice, olive oil, honey, salt, and black pepper.
  3. Toss and Mix:
    • Pour the dressing over the mango mixture and toss gently to coat evenly.
  4. Add Heat (Optional):
    • If using jalapeño, mix it in for a spicy kick.
  5. Chill and Serve:
    • Refrigerate for 15-20 minutes before serving to enhance the flavors.

Notes

  • For a milder taste, omit the jalapeño or use a milder pepper.
  • Use English cucumbers for the best texture, or peel and seed regular cucumbers.
  • Fresh lime juice is preferred, but bottled lime juice can be used in a pinch.
