Marry Me Chicken Pasta is a flavorful, creamy dish that combines tender chicken, al dente pasta, and a rich Parmesan and sun-dried tomato sauce. Ready in just 30 minutes, this romantic dinner idea is perfect for special occasions or weeknight meals.

 

Ingredients

  • 8 oz dried pasta of your choice
  • 1 tablespoon olive oil
  • ½ cup onion, finely chopped
  • 34 cloves garlic, minced
  • 1 tablespoon butter
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped
  • Fresh basil leaves, for garnish

Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add pasta and cook according to package instructions until al dente.
    • Reserve ½ cup pasta water, then drain and set pasta aside.
  • Prepare the Chicken and Sauce:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add onion and sauté for 2–3 minutes until softened.
    • Stir in garlic and butter, cooking for 30 seconds until fragrant.
    • Add chicken and season with Italian seasoning, smoked paprika, red pepper flakes, garlic powder, salt, and pepper. Cook for 3–5 minutes until browned and fully cooked.
  • Create the Sauce:
    • Stir in heavy cream, reserved pasta water, Parmesan cheese, and sun-dried tomatoes.
    • Simmer for 3–4 minutes, allowing the sauce to thicken. Adjust seasoning to taste.
  • Combine and Serve:
    • Add cooked pasta to the skillet and toss to coat evenly with the sauce.
    • Garnish with fresh basil leaves and serve immediately.

Notes

  • Reserve extra pasta water in case the sauce needs thinning.
  • Use gluten-free pasta or plant-based cream for dietary adaptations.
  • Garnish with extra Parmesan and basil for a stunning presentation.
