Ingredients

For the Chickpeas:

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon turmeric (optional, for color and flavor)
  • ¼ teaspoon ground cinnamon
  • 1 can (14 oz) coconut milk
  • ½ cup vegetable broth or water
  • Salt and pepper, to taste
  • 2 tablespoons fresh lemon juice
  • Fresh cilantro or parsley for garnish (optional)
  • Cooked rice or quinoa, for serving

Instructions

  • Sauté the Aromatics:
    Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant, but not browned.
  • Add the Spices and Tomatoes:
    Stir in the smoked paprika, cumin, turmeric, cinnamon, and sun-dried tomatoes. Cook for another 1-2 minutes to allow the spices to bloom and infuse the oil.
  • Add the Chickpeas and Liquid:
    Add the chickpeas, coconut milk, and vegetable broth (or water) to the skillet. Stir well to combine, then bring the mixture to a simmer.
  • Simmer and Cook:
    Let the chickpeas simmer for 10-15 minutes, allowing the sauce to thicken slightly and the flavors to meld together. Stir occasionally.
  • Season:
    Season the chickpeas with salt, pepper, and lemon juice. Taste and adjust the seasoning if needed.
  • Serve:
