Ingredients

For the Pasta:

  • 12 oz linguine or pasta of your choice

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • Salt and pepper, to taste

For the Sauce:

  • 3 cloves garlic, minced
  • 1 tsp red pepper flakes (optional)
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped

Instructions

  • Cook the Pasta:
    • Boil linguine in salted water according to package instructions. Drain and set aside.
  • Prepare the Shrimp:
    • Heat olive oil in a large skillet over medium heat.
    • Season shrimp with salt and pepper, and cook for 2–3 minutes until pink and opaque. Remove from skillet and set aside.
  • Make the Sauce:
    • In the same skillet, sauté garlic and red pepper flakes for 1 minute until fragrant.
    • Add sun-dried tomatoes and chicken broth, scraping up browned bits.
    • Stir in heavy cream and simmer for 3–4 minutes until slightly thickened.
    • Add Parmesan cheese, stirring until melted and creamy.
  • Combine and Serve:
    • Return shrimp to the skillet and toss to coat in the sauce.
    • Add the cooked pasta, tossing until fully coated.
    • Garnish with fresh basil and serve immediately.

Notes

  • For a lighter sauce, use half-and-half instead of heavy cream.
  • Adjust the spice level by modifying the amount of red pepper flakes.
  • To enhance the dish, add fresh spinach or sautéed mushrooms.
