Mediterranean Lentil Salad is a refreshing, protein-packed dish loaded with fresh vegetables, hearty lentils, and a tangy dressing. Ingredients

For the Salad:

  • 1 cup uncooked green lentils
  • 1 large cucumber, diced
  • 1 red onion, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, chopped
  • ⅓ cup feta cheese, crumbled
  • ¼ cup chopped parsley

For the Dressing:

  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Juice of 1 lemon
  • 2 tsp Dijon mustard
  • 1 tsp honey
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  • Cook the Lentils:

    • Rinse lentils under cold water.
    • Cook in 3 cups of water until tender, about 20 minutes.
    • Drain and let cool.
  • Prepare the Vegetables:

    • Dice the cucumber, onion, and tomatoes.
    • Chop the parsley and olives.
  • Mix the Salad:

    • In a large bowl, combine the lentils, vegetables, feta, and olives.
  • Make the Dressing:

    • Whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, honey, oregano, salt, and pepper.
  • Toss & Serve:

    • Pour the dressing over the salad and mix well.
    • Serve at room temperature or chilled.
