Ingredients

For the Filling:

  • 2 cups cooked chicken breast, shredded

  • 45 large flour tortillas

Instructions

  • Prepare the Filling: In a large bowl, combine shredded chicken, softened cream cheese, shredded cheddar cheese, green onions, red bell pepper, jalapeños (if using), black olives, and taco seasoning. Mix until well combined and creamy.
  • Assemble the Pinwheels: Lay a tortilla flat on a clean surface. Spread a generous layer of the chicken mixture over the tortilla, leaving a small border around the edges. Roll up the tortilla tightly, ensuring the filling stays inside. Repeat with remaining tortillas and filling.
  • Chill: Once all tortillas are rolled up, refrigerate them for at least 30 minutes to allow the flavors to meld and make them easier to slice.
  • Slice: After chilling, slice each tortilla into 1-inch wide pinwheels. Arrange them on a serving platter.
  • Serve: Enjoy immediately or store in the fridge for later.
