Ingredients

  • 1 pound ground beef or turkey
  • 23 cups cooked white rice
  • 1/2 bell pepper, chopped
  • 1/2 medium onion, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 can (15.25 oz) corn, drained
  • 1 can (15.5 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • Salt and pepper, to taste
  • Juice of half a lime
  • 1 tablespoon olive oil (if using lean meat)

Instructions

  1. Sauté Vegetables:
    In a large skillet over medium-high heat, add olive oil (if using lean meat). Sauté the chopped onion and bell pepper until softened, about 2 minutes.

  2. Cook Meat:
    Add the ground beef or turkey to the skillet. Cook until browned, breaking it up into crumbles as it cooks. Drain excess fat if necessary.

  3. Season:
    Stir in chili powder, onion powder, ground cumin, salt, and pepper. Cook for another minute to toast the spices.

  4. Add Vegetables and Rice:
    Add the corn, black beans, diced tomatoes (with their juice), and cooked rice to the skillet. Stir to combine all ingredients thoroughly.

  5. Simmer:
    Reduce the heat to medium-low and let the mixture simmer for about 5-7 minutes, allowing the flavors to meld together.

  6. Finish:
    Squeeze fresh lime juice over the rice mixture and stir well. Adjust seasoning with salt and pepper if needed.
