This Mexican Restaurant Cheese Dip (Chile con Queso) is the ultimate creamy, melty dip you love from your favorite Tex-Mex spot! Made with smooth White American Cheese, diced green chiles, and just the right seasonings, it’s perfect for dipping tortilla chips or drizzling over tacos and enchiladas.

Ingredients

  • ½ pound White American Cheese, cubed
  • 2 tablespoons diced green chiles, finely chopped
  • ¼ teaspoon garlic powder (optional)
  • ¾ to 1 cup milk (adjust for desired consistency)
  • Salt and pepper, to taste

Instructions

  • Melt the Cheese: In a saucepan over medium heat, combine White American Cheese, green chiles, and garlic powder (if using).
  • Stir Continuously: Cook for 10–12 minutes, stirring frequently until the cheese is fully melted and smooth.
  • Adjust the Consistency: Gradually add milk, stirring well to reach your preferred texture.
  • Season to Taste: Add salt and pepper as needed to enhance the flavors.
  • Serve & Enjoy: Transfer to a serving bowl and enjoy warm with tortilla chips, nachos, or as a topping for tacos, burritos, and enchiladas.

Notes

  • For a spicy kick, add diced jalapeños or a splash of hot sauce.
  • For extra creaminess, use evaporated milk instead of regular milk.
  • To prevent thickening, keep the dip warm on low heat and stir occasionally.
