This Moist Apple Crumble Coffee Cake features a tender, fluffy cake filled with sweet apples and topped with a buttery crumble. Finished with a simple glaze, this cake is perfect for breakfast, brunch, or dessert. A deliciously comforting treat that pairs perfectly with coffee or tea.

 

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups apples, peeled and finely diced

For the crumble topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1 teaspoon cinnamon

For the glaze:

  • 1/2 cup powdered sugar
  • 2 tablespoons milk

Instructions

  • Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9-inch baking pan, then lightly flour it.
  • Mix Cake Batter: Cream together butter and sugar until smooth. Add in eggs and vanilla extract, mixing well. Stir in sour cream. Sift in dry ingredients (flour, baking powder, baking soda, salt), and fold in diced apples.
  • Assemble in Pan: Pour the batter into the prepared pan, smoothing the top evenly.
  • Make Crumble Topping: Mix the crumble ingredients (flour, brown sugar, butter, and cinnamon) until the mixture resembles coarse crumbs. Sprinkle it over the batter.
  • Bake: Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Prepare Glaze: In a small bowl, whisk together powdered sugar and milk until smooth.
  • Finish and Serve: Allow the cake to cool before drizzling the glaze over the top.

Notes

  • For added crunch, sprinkle chopped walnuts or pecans on top of the crumble.
  • To store, keep the cake covered at room temperature for up to 3 days or refrigerate for up to a week.
