Ingredients

  • 1 lb firm white fish (like cod, halibut, or your favorite fish)
  • 1 can coconut milk
  • 1 cup seafood stock
  • 2 tomatoes, chopped
  • 1 bell pepper, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional for heat)
  • Zest of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Steamed rice, for serving

Instructions

  • Sauté the Aromatics:

    • In a large pot, heat 1-2 tablespoons of coconut oil over medium heat.
    • Add the chopped onions, bell peppers, garlic, paprika, and cayenne pepper (if using). Sauté for 3-4 minutes until softened and fragrant.
  • Add Tomatoes and Cook:

    • Stir in the chopped tomatoes and cook until softened, about 5 minutes.
  • Add Fish, Coconut Milk, and Stock:

    • Pour in the coconut milk and seafood stock, stirring to combine.
    • Add the fish fillets and lime zest, making sure the fish is submerged in the liquid.
    • Bring to a simmer, cover the pot, and cook for 10-15 minutes or until the fish is cooked through and flakes easily.
  • Serve:

    • Serve the Moqueca over steamed rice, and garnish with fresh cilantro and lime wedges for extra flavor.
