Tossed in a zesty homemade dressing, this easy Greek salad is perfect as a light meal or a refreshing side dish for grilled meats, seafood, or pita bread.

Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Prepare the Vegetables: In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  • Make the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper.
  • Combine: Pour the dressing over the salad and toss gently to coat evenly.
  • Add Feta: Sprinkle crumbled feta cheese on top just before serving.
  • Serve Immediately: Enjoy as a side dish or a main meal with grilled chicken or pita bread.

Notes

  • Add grilled chicken, shrimp, or chickpeas for extra protein.
  • Try a lemon vinaigrette or a yogurt-based dressing for a different flavor.
  • To mellow the onion’s sharpness, soak the slices in cold water for 10 minutes before adding them to the salad.
