These No Bake Chocolate Oat Bars are the ultimate quick and easy dessert, combining creamy peanut butter, oats, and dark chocolate for a satisfying treat. With minimal ingredients and no baking required, they’re perfect for when you’re short on time but still craving something indulgent and delicious.

 

Ingredients

For the Bars:

  • 1 cup butter
  • ½ cup brown sugar, packed
  • 1 teaspoon pure vanilla extract
  • 3 cups rolled oats
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt

For the Chocolate Topping:

  • 1 cup dark chocolate chips
  • ¾ cup chunky peanut butter

Instructions

  • Prepare the Baking Dish: Line an 8-inch by 8-inch baking dish with parchment paper.
  • Combine Butter and Sugar: In a saucepan, melt the butter and combine with brown sugar and vanilla extract. Stir until the sugar dissolves.
  • Add Oats and Spices: Stir in oats, cinnamon, and salt, cooking for 4 to 5 minutes.
  • Layer the Bars: Press half of the oat mixture into the prepared dish to form the base.
  • Prepare the Chocolate Layer: In a microwave-safe bowl, melt the chocolate chips and peanut butter in 40-second intervals, stirring in between.
  • Assemble the Bars: Spread ¾ of the melted chocolate mixture over the oat base. Reserve the rest for drizzling on top.
  • Final Touch: Add the remaining oat mixture on top and drizzle the reserved chocolate mixture over the bars.
  • Chill and Serve: Refrigerate for at least 4 hours until firm, then cut into squares and enjoy.
