This No-Bake Lemon Pie is the ultimate refreshing dessert for citrus lovers! With a creamy, tangy lemon filling set in a crisp graham cracker crust, it’s quick to prepare, requiring no baking. Perfect for any occasion, this pie can be made ahead of time and chilled for a delightful treat.

Ingredients

For the Pie:

  • 1 pre-made graham cracker crust (9-inch)
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup freshly squeezed lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • ½ cup heavy cream
  • 2 tablespoons powdered sugar

For Garnish:

  • Fresh whipped cream
  • Additional lemon zest or lemon slices

Instructions

  • Prepare the Filling:

    • In a large mixing bowl, combine the sweetened condensed milk, freshly squeezed lemon juice, and lemon zest. Stir until well combined.
  • Whip the Cream:

    • In a separate bowl, whip the heavy cream and powdered sugar using an electric mixer on medium speed until soft peaks form. Be careful not to overwhip, the cream should remain smooth and fluffy.
  • Combine:

    • Gently fold the whipped cream into the lemon mixture. Do this slowly to avoid deflating the whipped cream, helping keep the filling light and airy for a smooth texture.
  • Assemble the Pie:

    • Spoon the lemon filling into the pre-made graham cracker crust. Use a spatula to spread it evenly and smooth the top.
  • Chill:

    • Cover the pie with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the filling to set.
  • Serve and Garnish:

    • Before serving, top the pie with freshly whipped cream and garnish with additional lemon zest or lemon slices for added citrus flavor and color.
