No-Bake Pistachio Truffles are a quick, indulgent dessert that combines the rich flavor of pistachios with creamy chocolate. Ingredients

For the Pistachio Mixture:

  • 1 cup (130g) unsalted pistachios, shelled

  • 1/2 cup (120g) cream cheese, softened

  • 1/4 cup (60g) honey or maple syrup

  • 1/2 tsp vanilla extract

  • 1/4 tsp salt

For the Chocolate Coating:

  • 1/2 cup (90g) white chocolate chips or dark chocolate chips, melted

  • 1/4 cup finely chopped pistachios (for coating)

Instructions

  • Prepare the Pistachio Mixture:
    In a food processor, pulse the shelled pistachios until finely ground but still slightly textured. Add the softened cream cheese, honey (or maple syrup), vanilla extract, and salt. Process until smooth and fully combined.

  • Shape the Truffles:
    Scoop tablespoon-sized portions of the pistachio mixture and roll into small balls with your hands. Place them on a parchment-lined tray.

  • Coat the Truffles:
    In a microwave-safe bowl, melt the chocolate chips in 20-30 second intervals, stirring after each, until completely melted.
    Dip each pistachio ball into the melted chocolate, coating it completely. You can drizzle the chocolate over the truffles instead of dipping if preferred. Roll the dipped truffles in chopped pistachios for an added crunch.

  • Chill the Truffles:
    Refrigerate the truffles for at least 30 minutes to allow them to firm up and the chocolate to harden.
