Ingredients

  • 1 (14.1-ounce) package double-crust pie pastry, thawed
  • 2 (15.5-ounce) cans navy beans, rinsed and drained (or 3 cups cooked navy beans)
  • 1 (12-fluid-ounce) can evaporated milk
  • 2½ cups white sugar
  • ½ cup butter, melted
  • 2 large eggs
  • 2 large egg yolks
  • 2 tablespoons all-purpose flour
  • 2 tablespoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon grated nutmeg

Instructions

Prepare the Crust:

  1. Preheat oven to 450°F (230°C).
  2. Place each pie pastry into a 9-inch pie pan, crimping the edges as desired.

Blend the Filling:

  1. In a food processor, combine navy beans and evaporated milk.
  2. Add sugar, melted butter, eggs, egg yolks, flour, vanilla extract, cinnamon, and nutmeg.
  3. Pulse to combine, then process until the mixture is completely smooth (about 1 minute).

Fill the Pie Crusts:

  1. Evenly pour the blended filling into the prepared pie crusts, smoothing the tops if needed.

Bake the Pies:

  1. Bake at 450°F (230°C) for 15 minutes.
  2. Reduce oven temperature to 350°F (175°C) and continue baking for 35 minutes, or until the filling is set and the crust is golden brown.
