Ingredients

For the Bars:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips

For the Frosting:

  • 1/2 cup unsalted butter
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Milk (if needed, to thin frosting)

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  • Prepare the dough: In a large bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Combine dry ingredients: In another bowl, whisk together the rolled oats, flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined. Fold in the chocolate chips.
  • Bake: Spread the dough evenly into the prepared baking dish. Bake for 25-30 minutes, or until golden brown and a toothpick inserted comes out clean. Remove from the oven and let cool completely before frosting.
  • Make the frosting: In a small saucepan, melt the butter over medium heat. Continue cooking, swirling the pan occasionally, until the butter turns golden brown and smells nutty. Remove from heat and let cool slightly. Whisk the browned butter with powdered sugar and vanilla extract until smooth. Add a little milk if the frosting is too thick.
  • Frost the bars: Spread the browned butter frosting evenly over the cooled bars. Allow the frosting to set before cutting into squares.

Notes

  • Add-ins: You can add nuts like walnuts or pecans to the dough for extra crunch.
  • Variations: Try coconut flakes or swap in peanut butter frosting for a different twist.
  • Texture Tip: For best texture, use rolled oats instead of quick oats.
