Ingredients

For the Dumplings:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder (optional)
  • ¼ teaspoon onion powder (optional)
  • ¼ cup unsalted butter, softened
  • ½ cup milk
  • 1 tablespoon fresh parsley, chopped (optional)

For the Dinner:

  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1 cup green beans, trimmed
  • 1 cup frozen peas (optional)
  • 4 cups chicken broth (or vegetable broth)
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Make the Dumpling Dough:
    In a medium bowl, mix the flour, baking powder, salt, garlic powder, and onion powder. Stir in the softened butter and milk until combined into a thick dough. Add chopped parsley if desired, then set the dough aside.

  • Prepare the Chicken and Vegetables:

    • Cook the Chicken: In a large oven-safe skillet or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the chicken pieces, seasoning them with salt, pepper, and dried thyme. Cook for 5-7 minutes, or until the chicken is cooked through and browned. Remove the chicken from the skillet and set aside.
    • Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion, garlic, carrots, and green beans. Sauté for 4-5 minutes until the vegetables begin to soften.
  • Add the Broth:
    Pour in the chicken broth and bring to a simmer. Once simmering, return the chicken to the pan and stir to combine.

  • Cook the Dumplings:

    • Form and Add Dumplings: Using a spoon or small cookie scoop, drop spoonfuls of the dumpling dough over the simmering chicken and vegetable mixture. The dumplings should sit on top of the liquid and vegetables.
    • Simmer and Steam: Cover the skillet tightly with a lid and let the mixture simmer for about 12-15 minutes, or until the dumplings have puffed up and are cooked through. To check doneness, insert a toothpick into one of the dumplings—it should come out clean.
  • Serve:
    Garnish with fresh parsley and serve hot!
