Ingredients

For the cake:

  • 1 box (15.25 oz) yellow cake mix (or homemade vanilla cake mix)

  • 1 package (3.4 oz) instant orange pudding mix (dry)

  • 1 cup water

  • 1/2 cup vegetable oil

  • 3 large eggs

  • Zest of 1 orange (optional, for extra flavor)

For the filling:

  • 1/2 cup heavy cream

  • 1/2 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1/2 cup orange juice (freshly squeezed for best flavor)

For the frosting:

  • 1 cup heavy cream

  • 1/4 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 2 cups whipped topping (like Cool Whip)

  • 1 tablespoon orange zest (optional, for garnish)

  • Orange slices (optional, for garnish)

Instructions

  • Prepare the Cake:

    • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    • In a mixing bowl, combine cake mix, instant orange pudding, water, vegetable oil, eggs, and orange zest (if using). Beat on medium speed for 2 minutes.

    • Pour batter into prepared pans and bake for 28-30 minutes or until a toothpick inserted comes out clean. Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

  • Make the Filling:

    • Beat heavy cream until stiff peaks form. In a separate bowl, whisk powdered sugar, vanilla, and orange juice together. Gently fold in the whipped cream until smooth. Refrigerate until ready to use.

  • Make the Frosting:

    • Beat heavy cream with powdered sugar and vanilla extract until soft peaks form. Fold in the whipped topping until combined.

  • Assemble the Cake:

    • Once the cakes are completely cool, place one cake layer on a serving plate. Spread the orange filling evenly over the cake.

    • Place the second cake layer on top. Frost the entire cake with the whipped frosting.

  • Serve:

    • Garnish with orange zest or slices. Serve chilled or at room temperature for a refreshing treat.

Notes

  • Variations:

    • Make your own cake using a homemade vanilla or orange cake recipe for a personalized twist.

    • Add small pieces of orange segments to the filling for extra citrus flavor.

    • To make it vegan, swap dairy ingredients with plant-based alternatives like coconut cream and dairy-free whipped topping.

  • Storage:

    • Store leftovers in an airtight container in the fridge for up to 3-4 days.
