Ingredients

For the Muffins:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ½ cup fresh orange juice
  • 1 tbsp orange zest
  • ½ cup milk
  • 1 tsp vanilla extract

For the Orange Glaze:

  • 1 cup powdered sugar
  • 2 tbsp fresh orange juice
  • 1 tsp orange zest

Instructions

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  • Mix dry ingredients – In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  • Prepare wet ingredients – In another bowl, whisk melted butter, eggs, orange juice, orange zest, milk, and vanilla extract.
  • Combine – Gradually add wet ingredients to dry ingredients, stirring gently until just combined. Do not overmix.
  • Fill muffin tin – Divide the batter evenly among the muffin cups, filling each about ¾ full.
  • Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  • Cool muffins in the pan for 5 minutes, then transfer to a wire rack.
  • Make the glaze – In a small bowl, whisk powdered sugar, orange juice, and zest until smooth.
  • Drizzle glaze over cooled muffins and let set before serving.

Notes

  • For extra citrus flavor, increase the amount of orange zest or add orange extract.
  • To make dairy-free, use almond or oat milk.
  • For a richer texture, substitute half of the butter with sour cream or yogurt.
  • Storage – Keep at room temperature for 3 days, refrigerate for up to a week, or freeze for up to 3 months.
