  • ¼ cup all-purpose flour
  • 1 large egg, beaten
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • ½ cup heavy cream
  • 1 tablespoon chopped parsley (optional)

Instructions

  • Preheat the Oven:

    • Preheat oven to 375°F (190°C).
  • Prepare the Crust:

    • In a shallow dish, mix Parmesan cheese, breadcrumbs, and flour.
    • Season with salt and pepper.
  • Coat the Chicken:

    • Dip the chicken breasts into the beaten egg, then coat thoroughly in the Parmesan mixture, pressing to adhere.
  • Cook the Chicken:

    • Heat olive oil in a large oven-safe skillet over medium heat.
    • Add the chicken breasts and cook for about 3-4 minutes on each side, until golden brown.
  • Bake the Chicken:

    • Transfer the skillet to the oven and bake for 15-20 minutes or until the chicken is cooked through (internal temperature of 165°F).
  • Make the Cream Sauce:

    • While the chicken bakes, in a separate saucepan, melt butter over medium heat.
    • Add heavy cream and stir until the sauce thickens, about 3-5 minutes.
  • Finish and Serve:

    • Once the chicken is done, remove from the oven and drizzle with the cream sauce.
    • Garnish with chopped parsley if desired and serve hot.

Notes

  • Vegetarian Option: Substitute chicken with eggplant slices for a vegetarian version of the dish.
  • Side Dishes: Serve with roasted vegetables, mashed potatoes, or a simple salad to complement the rich chicken.
  • Flavored Crust: Add garlic powder or Italian seasoning to the crust mixture for extra flavor.
