Ingredients

For the Peach Filling:

  • 2 cups fresh peaches, peeled and diced (or use frozen peaches, thawed)
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 teaspoon cinnamon (optional)

For the Cruffin Dough:

  • 2 cans of refrigerated croissant dough (8 rolls per can)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon brown sugar (for sprinkling)

For the Glaze (optional):

  • ½ cup powdered sugar
  • 1 tablespoon milk or cream
  • ½ teaspoon vanilla extract

Instructions

  • Prepare the peach filling: In a small saucepan, combine diced peaches, sugar, lemon juice, cornstarch, and cinnamon (if using). Cook over medium heat, stirring occasionally, for 5-7 minutes, until the mixture thickens. Remove from heat and cool slightly.
  • Preheat the oven: Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  • Prepare the croissant dough: Unroll the croissant dough and separate it into triangles. Use a rolling pin to flatten each triangle slightly to make it larger.
  • Assemble the cruffins: Brush each flattened croissant triangle with melted butter and a small drizzle of vanilla extract. Place a spoonful of peach filling near the wide end of each triangle. Carefully roll up the dough starting from the wider side.
  • Shape the cruffins: Twist the rolled dough into a spiral and place it into the muffin tin, tucking the edges underneath. Repeat for the remaining dough and peach filling.
  • Bake the cruffins: Sprinkle the tops with brown sugar and bake for 18-22 minutes, or until golden brown and puffed.
  • Prepare the glaze (optional): Mix powdered sugar, milk (or cream), and vanilla extract in a small bowl until smooth.
  • Finish the cruffins: After baking, cool for a few minutes, then drizzle with glaze for added sweetness.
  • Serve and enjoy: Serve warm or at room temperature. Enjoy the delightful layers and peach filling.

Notes

  • Use fresh peaches for the best texture and flavor.
  • The glaze is optional but adds extra sweetness.
  • For a crispier crust, bake the cruffins on a higher oven rack.
