Ingredients

  • 1 cup packed light brown sugar
  • ½ cup all-purpose flour
  • 2 cups chopped pecans
  • ⅔ cup butter, softened
  • 2 large eggs, beaten

Instructions

  • Preheat & Prep:
    • Preheat your oven to 350°F (175°C).
    • Generously grease mini or regular muffin tins to prevent sticking.
  • Mix Dry Ingredients:
    • In a medium bowl, whisk together brown sugar, flour, and chopped pecans until evenly combined.
  • Prepare Wet Ingredients:
    • In a separate bowl, beat together the softened butter and eggs until smooth.
  • Combine Ingredients:
    • Gradually stir the dry ingredients into the wet mixture until just combined. Avoid over-mixing.
  • Fill Muffin Cups:
    • Spoon the batter into the prepared muffin tins, filling each about ⅔ full.
  • Bake:
    • Mini muffins: Bake for 12-13 minutes.
    • Regular muffins: Bake for 15-17 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  • Cool & Serve:
    • Let muffins cool for a few minutes before gently loosening them from the pan.
