These Protein Bagels are a nutritious and convenient option for a high-protein breakfast or snack. Made with just three main ingredients—cottage cheese, flour, and baking powder—these bagels are simple to prepare and packed with protein. Air frying them creates a golden crust while keeping the inside soft and fluffy. Perfect for busy mornings or meal prep!

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt (optional)
  • 1 cup + 2 tablespoons cottage cheese (2% or 4%)
  • 1 egg (optional, for brushing)
  • Toppings: everything seasoning, poppy seeds, sesame seeds (optional)

Instructions

. Prepare the Dough:

  • In a medium bowl, whisk together the flour and baking powder. Add a pinch of salt if desired.
  • Create a well in the center and add the cottage cheese. Mix using a fork or spatula until a chunky dough forms.

2. Knead the Dough:

  • Transfer the dough to a lightly floured surface. Knead gently until smooth and slightly sticky. If too sticky, add a small amount of flour.

3. Shape the Bagels:

  • Divide the dough into four equal portions.
  • Roll each portion into a ball, then flatten slightly and poke a hole in the center to create a bagel shape.

4. Add Toppings (Optional):

  • If using an egg wash, beat the egg and brush it over each bagel.
  • Sprinkle with everything seasoning, sesame seeds, or poppy seeds.

5. Air Fry the Bagels:

  • Preheat the air fryer to 280°F (138°C).
  • Place the bagels in the air fryer basket, ensuring they do not touch.
  • Cook for 15 minutes, then increase the temperature to 320°F (160°C) and cook for an additional 3-5 minutes until golden brown.

6. Cool and Serve:

  • Remove the bagels from the air fryer and let them cool on a wire rack.
  • Once cooled, slice and enjoy with your favorite spreads or fillings.

Notes

  • Gluten-Free Option: Use 1:1 gluten-free baking flour instead of all-purpose flour.
  • Flavor Additions: Mix in herbs, spices, or grated cheese for extra flavor.
  • Sweet Variation: Add 1 tablespoon honey or maple syrup and top with cinnamon sugar.
  • Oven Instructions: Bake at 350°F (175°C) for 20-25 minutes on a parchment-lined baking sheet.
