Ingredients

  • 1 tablespoon butter
  • ½ cup chopped onion
  • ½ cup chopped celery
  • 4 cups chicken broth
  • 1 (14.5-ounce) can chicken broth (or substitute with water)
  • 1 ½ cups cooked, shredded chicken breast
  • 1 ½ cups egg noodles
  • 1 cup chopped carrots
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

Sauté Aromatics: In a large pot, melt butter over medium heat. Add chopped onion and celery, cooking until softened (about 5 minutes).

2️⃣ Add Broth & Chicken: Pour in the chicken broth and bring to a boil. Stir in the cooked, shredded chicken.

3️⃣ Add Noodles & Veggies: Add the egg noodles, chopped carrots, basil, oregano, salt, and pepper. Reduce heat and simmer for 10-12 minutes, or until noodles are tender.

4️⃣ Serve: Taste and adjust seasoning if needed. Ladle into bowls and enjoy warm.

Notes

  • Creamy Chicken Noodle Soup: Stir in ½ cup of heavy cream for a richer texture.
  • Spicy Kick: Add red pepper flakes or a dash of hot sauce.
  • Low-Carb Option: Replace noodles with spiralized zucchini or cauliflower rice.
