Ingredients

For the Dough:

  • ¾ cup warm milk (about 110°F)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • ¼ cup granulated sugar
  • 1 large egg + 1 egg yolk
  • ¼ cup unsalted butter, melted
  • 3 cups all-purpose flour
  • ½ teaspoon salt

For the Raspberry Filling:

  • 1 ½ cups fresh or frozen raspberries
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 teaspoon cinnamon

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest

Instructions

Prepare the Dough

  • In a bowl, mix warm milk, yeast, and sugar. Let sit for 5-10 minutes until foamy.
  • Add egg, egg yolk, and melted butter, stirring to combine.
  • Mix in flour and salt and knead for 8-10 minutes until smooth.
  • Cover and let rise for 1 hour, or until doubled in size.

2. Make the Raspberry Filling

  • In a saucepan over medium heat, combine raspberries, sugar, cornstarch, lemon zest, and cinnamon.
  • Cook until thickened (3-5 minutes). Remove from heat and let cool.

3. Assemble the Rolls

  • Roll out the dough into a 12×18-inch rectangle.
  • Spread the cooled raspberry filling evenly over the dough.
  • Roll the dough tightly into a log and slice into 12 rolls.
  • Place in a greased 9×13-inch baking dish, cover, and let rise for 30 minutes.

4. Bake the Rolls

  • Preheat oven to 350°F (175°C).
  • Bake for 22-25 minutes, or until golden brown.

5. Make the Lemon Glaze

  • Whisk together powdered sugar, lemon juice, vanilla, and lemon zest until smooth.
  • Drizzle over warm cinnamon rolls.
