This Red Lobster-style Shrimp Scampi is a quick and easy recipe featuring tender shrimp sautéed in a rich garlic butter sauce with white wine and lemon. Serve it over pasta, rice, or with crusty bread for a restaurant-quality meal at home.

Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1½ cups white wine (Chardonnay or Pinot Grigio)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • ¼ teaspoon red pepper flakes (optional, for spice)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • ¼ cup grated Parmesan cheese (optional, for garnish)

Instructions

Sauté the Shrimp:

  • Heat olive oil in a large skillet over medium-high heat.
  • Season shrimp with salt and black pepper.
  • Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
  • Remove shrimp from the skillet and set aside.

2. Prepare the Garlic Butter Sauce:

  • In the same skillet, melt butter over medium heat.
  • Add minced garlic and sauté until fragrant (about 1 minute).
  • Pour in white wine and lemon juice, scraping up any browned bits.
  • Stir in Italian seasoning and let the sauce simmer and reduce by half (about 5 minutes).

3. Combine and Serve:

  • Return the cooked shrimp to the skillet and toss to coat in the sauce.
  • Cook for an additional 1-2 minutes to warm through.
  • Garnish with fresh parsley and Parmesan cheese, if desired.
  • Serve immediately over pasta, rice, or with crusty bread.

Notes

  • No wine? Substitute chicken broth for a non-alcoholic version.
  • Want it creamy? Add ¼ cup heavy cream at the end for a richer sauce.
  • Storage: Keep leftovers in an airtight container in the fridge for up to 2 days.
  • Reheating Tip: Warm gently in a skillet over low heat to avoid overcooking the shrimp.
