Ingredients

  • 2 red snapper fillets
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup diced tomatoes
  • 1/2 cup diced bell peppers (red or green)
  • 1/4 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tbsp Creole seasoning
  • 1/2 cup chicken broth
  • 1 tbsp chopped parsley for garnish

Instructions

  • Prepare the Fish:
    • Season the red snapper fillets with salt and pepper on both sides.
    • Heat olive oil in a skillet over medium-high heat.
    • Sear the red snapper fillets for about 3-4 minutes on each side until golden brown and cooked through. Once done, remove from the skillet and set aside.
  • Make the Sauce:
    • In the same skillet, add more olive oil if needed.
    • Sauté diced onions, bell peppers, and garlic for about 3-4 minutes until softened.
    • Add diced tomatoes and cook for another 2 minutes.
    • Pour in chicken broth, heavy cream, and Creole seasoning. Stir and simmer for 5-7 minutes until the sauce thickens.
  • Combine and Serve:
    • Return the red snapper to the skillet and spoon the sauce over the fish.
    • Let the fish warm through in the sauce for 1-2 minutes.
  • Garnish and Serve:
    • Garnish with chopped parsley and serve hot.

  • For a spicier version, add cayenne pepper or jalapeños to the sauce.
  • To make it dairy-free, swap the heavy cream with coconut milk.
