Ingredients

  • 1 cup butter, softened to room temperature
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cups rolled oats
  • 2 cups Rice Krispies cereal
  • 12 cups semi-sweet chocolate chips

Instructions

  • Preheat Oven:
    • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or grease lightly.
  • Mix Dry Ingredients:
    • In a medium bowl, whisk together flour, baking powder, and baking soda. Set aside.
  • Cream Butter and Sugars:
    • Using an electric mixer, cream butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  • Add Eggs and Vanilla:
    • Beat in eggs one at a time. Mix in vanilla extract until fully combined.
  • Combine Wet and Dry Mixtures:
    • Gradually add the flour mixture to the wet ingredients, mixing until just combined. Avoid overmixing.
  • Fold in Mix-Ins:
    • Gently fold in rolled oats, Rice Krispies cereal, and chocolate chips until evenly distributed.
  • Scoop Dough:
    • Drop dough onto the prepared baking sheet using a cookie scoop or spoon, spacing cookies a few inches apart.
  • Bake:
    • Bake for 9-10 minutes, or until edges are light golden brown.
  • Cool:
    • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
