Ingredients

  • 1 pre-made pie crust (or homemade if preferred)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • 3 large eggs
  • 1 cup heavy cream or milk
  • 1 teaspoon dried oregano
  • ½ teaspoon salt, or to taste
  • Freshly ground black pepper to taste
  • ½ teaspoon nutmeg (optional)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the Spinach Filling:

    • Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, cooking until softened (about 3-4 minutes).
    • Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  3. Prepare the Quiche Filling:

    • In a large bowl, whisk together eggs, ricotta cheese, mozzarella cheese, cream (or milk), oregano, salt, black pepper, and nutmeg (if using).
    • Stir in the cooled spinach mixture until well combined.
  4. Assemble the Quiche:

    • Pour the spinach and ricotta filling into the prepared pie crust.
    • Spread the mixture evenly and smooth the top.
  5. Bake the Quiche:

    • Bake for 35-40 minutes, or until the filling is set and lightly golden on top. A toothpick inserted into the center should come out clean.
  6. Serve:

    • Let the quiche cool for a few minutes before slicing and serving. Enjoy warm or at room temperature.

Notes:

  • Crustless Version: For a lower-carb option, you can skip the pie crust and bake the filling directly in a greased pie dish.
  • Add-ins: Feel free to add other ingredients like cooked bacon, mushrooms, or bell peppers for additional flavor.
  • Make-Ahead: This quiche can be prepared ahead of time and stored in the fridge for up to 2 days. It can be enjoyed cold or reheated.
