Roasted Strawberry Whipped Ricotta Toast combines creamy whipped ricotta, sweet and tangy roasted strawberries, and a drizzle of honey on toasted bread. Perfect for breakfast, a snack, or a light dessert, it’s elegant and easy to make.

 

Ingredients

For the Roasted Strawberries:

  • 1 pint fresh strawberries, hulled and sliced
  • 1 tbsp honey
  • 1 tsp balsamic vinegar
  • Pinch of salt

For the Whipped Ricotta:

  • 1 cup ricotta cheese
  • 1 tbsp honey
  • ½ tsp vanilla extract

For Assembly:

  • 4 slices crusty bread, toasted
  • Fresh thyme or basil leaves (optional)
  • Extra honey for drizzling

Instructions

  • Prepare the Roasted Strawberries:
    • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
    • In a bowl, toss sliced strawberries with honey, balsamic vinegar, and a pinch of salt.
    • Spread strawberries in a single layer on the baking sheet.
    • Roast for 20-25 minutes, or until soft and caramelized. Let cool.
  • Prepare the Whipped Ricotta:
    • Combine ricotta, honey, and vanilla extract in a medium bowl.
    • Using a hand mixer or whisk, whip until smooth and creamy.
  • Assemble the Toast:
    • Spread a generous layer of whipped ricotta on each slice of toasted bread.
    • Top with roasted strawberries.
    • Garnish with fresh thyme or basil leaves if desired, and drizzle with extra honey.

Notes

  • Substitute ricotta with whipped cashew cream for a dairy-free version.
  • Roasted strawberries can be made ahead and stored in the fridge for up to 3 days.
  • Add a savory twist with flaky sea salt or cracked black pepper.
