Sambusa, or Somali-style samosas, are crispy, golden pastries filled with spiced meat, onions, and fresh herbs. A popular snack in Somali cuisine, these savory treats are perfect for Ramadan, gatherings, or as an appetizer. Whether fried or baked, they deliver bold flavors in every bite.

Ingredients

For the Filling:

  • 1 lb ground beef or lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red chili powder (optional)
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon vegetable oil

For the Dough (or Use Store-Bought Spring Roll Wrappers):

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons oil or melted butter
  • 1/2 cup warm water (adjust as needed)

For Frying:

  • 2 cups vegetable oil

Instructions

  • Prepare the Filling:

    • Heat 1 tablespoon of oil in a pan over medium heat. Sauté onions and garlic until soft.
    • Add ground meat and cook until browned, breaking it up with a spoon.
    • Stir in cumin, coriander, cardamom, salt, pepper, and chili powder. Cook for another 5 minutes.
    • Remove from heat, stir in chopped cilantro, and let cool.
  • Make the Dough (Skip if Using Store-Bought Wrappers):

    • In a bowl, mix flour and salt. Add oil or melted butter.
    • Gradually add warm water while kneading until a smooth dough forms. Let rest for 30 minutes.
  • Assemble the Sambusas:

    • Roll out the dough and cut into 3-inch-wide strips.
    • Place filling on one end, fold into a triangle, and continue folding until sealed.
    • If using store-bought wrappers, fold into a triangle and seal with water or flour paste.
  • Fry the Sambusas:

    • Heat oil to 350°F (175°C). Fry sambusas for 2-3 minutes per side until golden brown.
    • Drain on paper towels and serve hot.
  • Serve:

    • Enjoy with chutney, yogurt sauce, or spiced tea

Notes

  • Vegetarian Option: Swap meat for spiced mashed potatoes, peas, and carrots.
  • Baked Version: Brush with oil and bake at 375°F for 20 minutes, flipping halfway.
  • Freezing: Freeze uncooked sambusas for up to 3 months and fry directly from frozen.
