Ingredients

  • 1 cup jasmine rice
  • 2 tablespoons unsalted butter
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 stalk lemongrass, trimmed and smashed (or 1 teaspoon lemongrass paste)
  • 1 can (14 oz) coconut milk
  • 1 cup fish or vegetable broth
  • 1 tablespoon lime juice (plus extra wedges for garnish)
  • 1 teaspoon fish sauce (optional)
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon chili flakes (optional, for heat)
  • 1/2 cup chopped cilantro, for garnish
  • Salt and pepper, to taste

Instructions

  • Sauté the onions: In a medium saucepan, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, for about 8-10 minutes, or until the onions are softened and caramelized. Stir frequently to avoid burning. If they start to stick, add a splash of water to deglaze the pan.
  • Add the rice and seasonings: Add the jasmine rice to the pan with the onions, and stir to combine. Add the salt, black pepper, garlic powder, and turmeric (if using). Stir the rice and onions together for 2-3 minutes, allowing the rice to lightly toast and absorb the flavors.
  • Cook the rice: Pour in the water or chicken broth, bring it to a boil, then reduce the heat to low. Cover the pan with a tight-fitting lid and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Avoid lifting the lid while cooking to ensure the rice steams properly.
  • Fluff and serve: Once the rice is cooked, remove the pan from the heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork to separate the grains, and stir in any caramelized onions that may have stuck to the bottom of the pan.
  • Garnish and enjoy: Optionally, garnish with fresh parsley before serving.
