Scallion Chicken is a quick and flavorful Asian-inspired stir-fry featuring tender chicken thighs and fresh scallions in a savory soy and oyster sauce. Ready in just 20 minutes, this dish is perfect for busy weeknights and pairs beautifully with rice or noodles.

Ingredients

  • 400g (14 oz) chicken thighs, cut into small pieces
  • 2 cups scallions (spring onions), chopped (white and green parts separated)
  • 4 tablespoons oil
  • 2 tablespoons soy sauce
  • ½ tablespoon dark soy sauce (optional, for color)
  • ½ tablespoon oyster sauce
  • ½ teaspoon black pepper (adjust to taste)
  • 2 tablespoons cornstarch

Instructions

Marinate the Chicken:

  1. In a bowl, mix chicken, soy sauce, oyster sauce, black pepper, and cornstarch.
  2. Let marinate for 10 minutes.

Prepare the Scallions:

  1. Chop scallions, keeping the white and green parts separate.

Cook the Chicken:

  1. Heat 4 tablespoons oil in a non-stick pan over medium heat.
  2. Add marinated chicken in a single layer and cook until golden brown and fully cooked, stirring occasionally (about 5-7 minutes).

Add Scallions:

  1. Add the white parts of the scallions and stir-fry for 1-2 minutes until softened.
  2. Add the green parts and stir-fry for 10-20 seconds until just wilted.

Serve:

  1. Transfer to a serving dish and garnish with extra scallions or black pepper.
  2. Serve hot with steamed rice, noodles, or a side of stir-fried vegetables.
