Ingredients

For the Chowder:

  • 1 lb mixed seafood (shrimp, scallops, clams, or white fish), cut into bite-sized pieces
  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 2 medium carrots, diced
  • 3 medium potatoes, peeled and cubed
  • 3 cloves garlic, minced
  • 1 cup chicken broth or vegetable broth
  • 2 cups heavy cream or half-and-half
  • 1 cup whole milk
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • ¼ cup chopped green onions (optional, for garnish)

Instructions

  • Cook the Vegetables:
    In a large pot, melt the butter over medium heat. Add the diced onion, celery, and carrots. Sauté for 5-7 minutes until softened and fragrant.
  • Add the Garlic and Potatoes:
    Stir in the minced garlic and cook for 1 minute. Add the cubed potatoes and sauté for another 2 minutes.
  • Add the Broth and Simmer:
    Pour in the chicken or vegetable broth, and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 10-15 minutes, or until the potatoes are tender.
  • Add the Cream and Milk:
    Stir in the heavy cream (or half-and-half) and whole milk. Add the thyme, paprika, salt, and pepper. Let it simmer gently for 5 minutes, stirring occasionally.
  • Cook the Seafood:
    Add the seafood to the pot and cook for 5-7 minutes, or until the seafood is cooked through and opaque. Shrimp should turn pink, and scallops or fish should flake easily with a fork.
  • Adjust Seasoning:
    Taste the chowder and adjust the seasoning with more salt, pepper, or paprika, as needed.
  • Serve:
    Ladle the chowder into bowls, garnish with fresh parsley and green onions (if desired), and serve hot with crusty bread or crackers.
