Shepherd’s Pie Soup transforms the classic comfort food into a hearty and satisfying meal. Packed with ground beef, savory vegetables, and rich seasonings, this one-pot soup delivers all the beloved flavors of Shepherd’s Pie in a warm, easy-to-prepare form.

 

Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 can diced tomatoes (14 oz)
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika (optional)
  • Salt and pepper, to taste
  • ½ cup heavy cream or milk (optional)

Optional Garnishes:

  • Mashed potatoes
  • Shredded cheddar cheese
  • Fresh parsley

Instructions

  1. Sauté Aromatics:
    • In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
    • Add the onion and garlic, cooking until the onion becomes translucent.
  2. Add Vegetables:
    • Mix in the carrots and celery. Sauté for 3-4 minutes until slightly softened.
  3. Simmer:
    • Pour in the beef broth and diced tomatoes. Stir in thyme, Worcestershire sauce, smoked paprika (if using), salt, and pepper.
    • Bring to a boil, then reduce heat to simmer for 15-20 minutes until vegetables are tender.
  4. Finish with Peas and Cream:
    • Stir in frozen peas and cook for an additional 3-5 minutes.
    • For a creamier soup, stir in heavy cream or milk just before serving.
  5. Serve:
    • Ladle soup into bowls. Top with mashed potatoes, shredded cheddar cheese, and fresh parsley, if desired.

  • For a traditional flavor, substitute ground beef with ground lamb.
