Ingredients

For the Chicken Gravy:

  • 2 cups cooked, shredded chicken (rotisserie or freshly cooked)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup milk or heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • Salt and black pepper, to taste

For the Mashed Potatoes:

  • 4 large potatoes, peeled and cubed
  • ½ cup milk or heavy cream
  • 4 tablespoons butter
  • Salt and black pepper, to taste

Instructions

    • Mash the Potatoes: Drain the potatoes and return them to the pot. Add butter, milk (or cream), salt, and pepper. Mash until smooth and creamy. Cover and set aside.
  • Make the Chicken Gravy:

    • Prepare the Roux: In a large skillet, melt butter over medium heat. Whisk in the flour and cook for about 1-2 minutes until golden brown.
    • Add the Broth: Gradually pour in the chicken broth while whisking constantly to avoid lumps. Stir in the milk or heavy cream.
    • Season the Gravy: Add garlic powder, onion powder, thyme, salt, and pepper. Stir well and let it simmer for 5-7 minutes until thickened.
    • Add the Chicken: Stir in the shredded chicken and cook for another 5 minutes to absorb the flavors.
  • Serve:

    • Spoon a generous portion of mashed potatoes onto a plate or bowl.
    • Ladle the shredded chicken gravy over the mashed potatoes.
    • Garnish with fresh parsley (optional) and serve warm.

Notes

  • Add Vegetables: Stir in peas, carrots, or corn for extra texture and flavor.
  • Spicy Kick: Add a pinch of cayenne pepper or red pepper flakes for some heat.
  • Creamier Gravy: Use heavy cream instead of milk for a richer, creamier gravy.
  • Slow Cooker Version: For a hands-off method, add all gravy ingredients (except flour) to a slow cooker and cook on low for 4-6 hours. Mix a slurry of flour and water at the end to thicken.
