Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup cooked white rice
  • 1 ½ cups shredded cheddar cheese
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons butter, melted
  • ½ cup breadcrumbs
  • Fresh parsley (optional, for garnish)

Instructions

  • Cook the Shrimp: Sauté shrimp in a skillet until pink and cooked through; set aside.
  • Prepare the Mixture: Combine sour cream, mayonnaise, lemon juice, garlic powder, onion powder, paprika, salt, and pepper in a bowl. Mix in rice, shrimp, and 1 cup cheese.
  • Assemble the Casserole: Spread the mixture into a greased baking dish. Top with remaining cheese.
  • Add the Topping: Mix melted butter and breadcrumbs; sprinkle on top of casserole.
  • Bake: Bake at 350°F (175°C) for 25-30 minutes until golden and bubbly. Garnish with parsley if desired.
