This Shrimp Scampi Pasta Bake combines the classic flavors of shrimp scampi with the comforting richness of a cheesy baked pasta dish. With garlic butter shrimp, creamy lemon-infused sauce, and melted mozzarella, this casserole is perfect for a weeknight dinner or special occasion!

Ingredients

  • 12 oz (340 g) pasta (penne or spaghetti)
  • 1 lb (450 g) large shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup dry white wine or chicken broth
  • 1 lemon, zested and juiced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • ¼ cup fresh parsley, chopped
  • 1 cup shredded mozzarella cheese

Instructions

Cook the Pasta

  • Preheat the oven to 350°F (175°C).
  • Cook the pasta in salted boiling water until al dente. Drain and set aside.

2. Prepare the Shrimp

  • In a large skillet over medium heat, melt 2 tablespoons butter.
  • Add garlic and red pepper flakes (if using) and sauté for 1 minute until fragrant.
  • Add shrimp and cook 2-3 minutes per side until pink and opaque.
  • Remove shrimp from the skillet and set aside.

3. Make the Sauce

  • In the same skillet, melt remaining 2 tablespoons butter.
  • Pour in white wine (or chicken broth) and lemon juice, scraping up browned bits.
  • Simmer for 2 minutes, then stir in heavy cream, lemon zest, and Parmesan cheese.
  • Season with salt and black pepper to taste. Simmer for 3-5 minutes until slightly thickened.

4. Combine Pasta and Sauce

  • Toss cooked pasta in the sauce to coat evenly.
  • Gently fold in shrimp and parsley.

5. Bake the Dish

  • Transfer the pasta mixture to a greased 9×13-inch baking dish.
  • Sprinkle mozzarella cheese evenly over the top.
  • Bake for 15-20 minutes until the cheese is melted and bubbly.

6. Serve

  • Remove from the oven and let it rest for a few minutes before serving.
  • Garnish with additional parsley, if desired.

  • Storage: Cool completely and store in an airtight container in the fridge for up to 3 days.
