Skillet Banana Fritters are a quick and easy treat, perfect for breakfast or dessert. These crispy-on-the-outside, tender-on-the-inside fritters are packed with warm spices and sweet banana flavor, making them an irresistible way to use overripe bananas.

Ingredients

  • 3 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup milk
  • 1 tsp vanilla extract
  • Vegetable or canola oil, for frying
  • Powdered sugar, for dusting (optional)

Instructions

  • Prepare the Batter:
    • Mash the ripe bananas in a large bowl until smooth.
    • In a separate bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
    • Add the dry ingredients to the mashed bananas, followed by the milk and vanilla extract. Stir until just combined, avoiding overmixing.
  • Rest the Batter:
    • Let the batter rest for about 5 minutes.
  • Heat the Oil:
    • Heat approximately ¼ inch of oil in a skillet over medium heat until shimmering.
  • Fry the Fritters:
    • Scoop spoonfuls of batter into the hot oil and gently flatten them with the back of the spoon.
    • Fry for 2-3 minutes on each side until golden brown and cooked through.
    • Transfer the fritters to a paper towel-lined plate to drain excess oil.
  • Serve:
    • Dust the warm fritters with powdered sugar, if desired.
    • Serve immediately with optional toppings like whipped cream, maple syrup, or vanilla ice cream.

Notes

  • Use overripe bananas for the sweetest flavor and best texture.
  • Add mini chocolate chips, shredded coconut, or chopped nuts for fun variations.
  • For gluten-free fritters, substitute all-purpose flour with a gluten-free flour blend.
