Slow Cooker Beef Ramen Noodles is a hearty, flavorful dish featuring tender beef, savory broth, and soft ramen noodles, all cooked to perfection in the slow cooker. It’s an easy, comforting meal that’s perfect for busy days or cozy family dinners.

Ingredients

  • 1 pound beef stew meat or chuck roast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce (optional)
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 23 packs ramen noodles (discard seasoning packet)
  • 1 cup sliced mushrooms (optional)
  • 1/2 cup green onions, chopped (for garnish)
  • 1 boiled egg (optional, for garnish)

Instructions

  • Sear the beef: Heat olive oil in a skillet over medium-high heat. Add the beef stew meat and sear on all sides until browned. Remove and set aside.

  • Cook the aromatics: In the same skillet, sauté the chopped onion and minced garlic until softened and fragrant, about 2-3 minutes.

  • Add to slow cooker: Transfer the seared beef, sautéed onions and garlic to the slow cooker. Pour in the beef broth, soy sauce, hoisin sauce (if using), ground ginger, garlic powder, black pepper, and red pepper flakes (if using). Stir to combine.

  • Slow cook: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.

  • Add ramen noodles: About 20-30 minutes before serving, add the ramen noodles to the slow cooker. Break them up and stir into the broth. Let them cook until tender.

  • Serve: Ladle the beef, broth, and noodles into bowls. Garnish with chopped green onions and a boiled egg (optional).

Notes

  • Storage: Leftovers can be stored in the refrigerator for up to 3 days.
  • Freezing: Beef and broth can be frozen, but store the noodles separately. Add noodles when reheating.
  • Spicy Version: Add sriracha or chili paste for a spicy kick.
  • Vegetarian Version: Substitute beef with tofu or tempeh and use vegetable broth.
