Slow Cooker Cowboy Casserole is a hearty, one-pot meal that’s perfect for busy days. Packed with ground beef, beans, corn, cheese, and crispy tater tots, this comforting dish is easy to make and full of savory flavors. A family-friendly favorite!

Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning mix
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 bag (about 20 oz) frozen tater tots

Instructions

  • Brown the ground beef: In a skillet, cook the ground beef over medium heat until browned and fully cooked, breaking it apart with a spoon as it cooks. Drain any excess fat.
  • Layer the ingredients: In the slow cooker, layer the cooked ground beef, kidney beans, black beans, corn, and diced tomatoes. Pour in the cream of mushroom soup and sprinkle the taco seasoning. Stir to combine.
  • Add sour cream and cheese: Stir in sour cream and half of the shredded cheddar and mozzarella cheeses. Mix until well combined.
  • Top with tater tots: Arrange the frozen tater tots evenly over the casserole mixture. Cover and cook on low for 4-6 hours or until the tater tots are golden and crispy.
  • Finish with cheese: Once cooked, sprinkle the remaining shredded cheddar and mozzarella cheeses on top, and let it melt for 10 minutes before serving.
  • Serve: Scoop the casserole onto plates and garnish with sour cream, salsa, or fresh cilantro if desired.
