Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • Zest and juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper

Instructions

Prepare the Chicken:

  1. Place Chicken in Slow Cooker – Arrange the chicken breasts in the bottom of a 6-quart slow cooker.

Make the Yogurt Mixture:

  1. Mix Ingredients – In a medium bowl, combine Greek yogurt, lemon zest, lemon juice, olive oil, salt, basil, oregano, garlic powder, onion powder, thyme, and black pepper. Stir until well mixed.

Combine and Cook:

  1. Coat the Chicken – Spread half of the yogurt mixture evenly over the chicken breasts, ensuring the chicken is well coated.
  2. Reserve Sauce – Set aside the remaining yogurt mixture in the refrigerator to use as a sauce later.
  3. Cook the Chicken – Cover the slow cooker and cook on low for 4-5 hours, or until the chicken is tender and fully cooked.

Shred and Serve:

  1. Shred the Chicken – Remove the chicken from the slow cooker and shred using two forks.
  2. Mix with Juices – Return the shredded chicken to the slow cooker and mix with the remaining juices.
  3. Serve – Serve the chicken over grains like rice or with whole-grain pita. Drizzle the reserved yogurt sauce over the top before serving.
