Ingredients

For the Chicken Skewers:

  • 2 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons sriracha sauce (adjust to taste)
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon lime juice
  • 1 teaspoon garlic powder

For Garnish (optional):

  • Chopped green onions
  • Sesame seeds
  • Cilantro

Instructions

  • Prepare the chicken: In a bowl, combine the cubed chicken with olive oil, soy sauce, garlic powder, onion powder, salt, and pepper. Toss until evenly coated. Thread the marinated chicken onto skewers, leaving a little space between each piece.
  • Make the Bang Bang sauce: In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, lime juice, and garlic powder. Adjust the heat level by adding more sriracha if desired.
  • Grill the chicken: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 4-5 minutes per side, or until the chicken is fully cooked and has nice grill marks. Alternatively, bake the skewers at 400°F (200°C) on a lined baking sheet for 15-20 minutes, flipping halfway through.
  • Glaze with sauce: While the chicken is still hot, drizzle or brush the Bang Bang sauce over the skewers, ensuring each piece is generously coated.
  • Serve and garnish: Transfer the skewers to a serving platter. Garnish with chopped green onions, sesame seeds, and cilantro. Serve with extra sauce on the side if desired.

Notes

  • For a milder version, reduce or eliminate the sriracha sauce.
  • You can make the Bang Bang sauce in advance and store it in the refrigerator for up to 5 days.
  • Double or triple the recipe for larger gatherings or parties.
