Spinach and Feta Börek (Turkish Borek) is a savory pastry made with flaky phyllo dough and filled with a creamy mixture of spinach, feta cheese, and seasonings. Ingredients

  • Phyllo dough
  • 4 cups spinach
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil (for brushing)
  • 1 onion, finely chopped
  • 1 egg (yolk for filling, whole for wash)
  • 2 tablespoons yogurt
  • 2 tablespoons milk (for wash)
  • Salt and pepper to taste

Instructions

  • Prepare the Filling:
    • Sauté the onion in olive oil until soft.
    • Add the spinach and cook until wilted. Season with salt and pepper, then set aside to cool.
    • Mix the cooled spinach mixture with crumbled feta and egg yolk.
  • Assemble the Börek:
    • Lay out phyllo dough on a flat surface and brush each layer with olive oil.
    • Spread the spinach and feta mixture evenly over the dough.
    • Roll the phyllo dough into a log or spiral shape, depending on your preference.
  • Bake:
    • Preheat the oven to 375°F (190°C).
    • Beat the egg and mix with yogurt and milk for the wash. Brush the rolled börek with this mixture.
    • Bake for 35 minutes or until golden brown and crispy.
  • Serve:
    • Allow to cool slightly before slicing and serving.
