Ingredients

  • 4 large bell peppers, halved and deseeded
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 1 egg, lightly beaten
  • ½ cup shredded mozzarella cheese (for topping)

Instructions

  • Preheat Oven:

    • Set oven to 375°F (190°C). Lightly grease a baking dish.
  • Prepare the Peppers:

    • Slice bell peppers in half, remove seeds, and arrange them in the dish.
    • Drizzle with olive oil.
  • Make the Filling:

    • In a bowl, mix ricotta, Parmesan, spinach, garlic powder, salt, black pepper, red pepper flakes, and egg.
    • Stir until well combined.
  • Stuff the Peppers:

    • Fill each bell pepper half with the ricotta mixture.
  • Bake:

    • Cover with foil and bake for 25 minutes.
    • Remove foil, sprinkle mozzarella on top, and bake uncovered for another 10 minutes until golden.
