Spinach Cheese Pie is a rich and savory dish featuring a creamy blend of spinach, ricotta, mozzarella, Parmesan, and Cheddar cheeses, all wrapped in a flaky pie crust. Inspired by Greek spanakopita, this hearty and comforting pie is perfect for breakfast, brunch, or dinner.

Ingredients

  • Spinach (fresh or frozen, drained and chopped)
  • Salt
  • Pepper
  • Nutmeg
  • Ricotta cheese
  • Mozzarella cheese (shredded)
  • Parmesan cheese (grated)
  • Cheddar cheese (shredded)
  • Pie crusts (store-bought or homemade)

Instructions

  • Preheat the Oven – Set to 350°F (175°C).
  • Prepare the Pie Dish – Press one pie crust into a 9-inch glass pie dish.
  • Make the Filling – In a large bowl, combine spinach, salt, pepper, and nutmeg. Stir in ricotta, mozzarella, Parmesan, and Cheddar cheese until well mixed.
  • Assemble the Pie – Pour the spinach and cheese mixture into the prepared crust. Place the second pie crust on top, sealing and trimming the edges.
  • Bake – Place in the oven and bake for 40 minutes, or until the crust is golden brown.
  • Rest and Serve – Let the pie sit for 10 minutes before slicing and serving.

Notes

  • Variations: Use phyllo dough instead of pie crust, add fresh herbs, or substitute feta for a tangier taste.
  • Storage: Store leftovers in the fridge for up to 3 days.
  • Reheating: Warm slices in a 350°F oven for 10-15 minutes or microwave on medium.
