Spinach Lasagna Roll-Ups are a delicious and fun twist on traditional lasagna. These individual servings feature lasagna noodles filled with a creamy spinach and ricotta mixture, topped with marinara sauce and melted mozzarella cheese. A perfect family-friendly meal, these roll-ups offer all the comforting flavors of lasagna but in an easy-to-serve, customizable format. Great for potlucks, weeknight dinners, or special occasions, this recipe is both nutritious and satisfying.

Ingredients

  • 912 lasagna noodles (depending on pan size)
  • 2 cups ricotta cheese

  • 2 cups fresh spinach (chopped) or 1 cup frozen spinach (thawed and drained)

  • 1 egg

  • 1 1/2 cups shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried oregano

  • Salt and pepper, to taste

  • 2 cups marinara sauce (store-bought or homemade)

  • 1/2 cup shredded mozzarella cheese (for topping)

Instructions

  • Preheat the oven: Preheat to 375°F (190°C). Grease a 9×13-inch baking dish with non-stick spray or olive oil.

  • Cook the noodles: Cook the lasagna noodles according to the package instructions. Drain and lay them flat to avoid sticking.

  • Prepare the filling: In a bowl, combine ricotta, spinach, egg, 1 1/2 cups mozzarella, Parmesan, garlic powder, oregano, salt, and pepper. Mix well.

  • Assemble the roll-ups: Spread a thin layer of marinara sauce in the baking dish. Spread the spinach-ricotta filling on each noodle and roll it up. Place seam-side down in the baking dish.

  • Top with sauce and cheese: Pour the remaining marinara sauce over the roll-ups, then sprinkle with the remaining mozzarella cheese.

  • Bake: Cover with foil and bake for 20-25 minutes. Remove the foil and bake for an additional 5-10 minutes to brown the cheese.

  • Serve: Let the roll-ups cool slightly, then serve. Garnish with fresh basil or extra Parmesan if desired.

  • Makes 9-12 individual roll-ups, depending on pan size.

  • Customize by adding ground meat, mushrooms, or extra herbs.
